Arabica Aceh Gayo

Gayo highland, Aceh Tengah district, and Bener Mariah district, is the largest arabica coffee producer in Indonesia. Located around Danau Laut Tawar and the slopes of 5 mountains, namely Peutsago, Bateekeubelie, Geureudong, Leuser, and Abongabong. Gayo highland coffee in the market is known by the name of Gayo, Takengon, Gajah Mountain, and Laut Tawar. Most of the planted varieties are descendants of Catimor, East Timor, and Gayo 2 (East Timorese descendants). The most common treatment is semi-washed (full washed wet hulling). From the analysis, the commercial coffee taste of Aceh Tengah a group with varieties of Catimor Jaluk, East Timor, and C50. Varieties that have special taste are Gayo 2, P88, S795, and Bergendal (Typica). The specific character of Gayo highland specialty coffee is strong fragrance, complex flavour, high acidity, high body, high balance, mild, fruity, salty, nice, syrupy, high sweetness, and rich (Mandheling type). Additional characters that appear include herbs, green, and grassy. In the Gayo highlands, varieties/types of coffee spread in the community are Typica/Bergendal, Descendant of Catimor, Kate type often called Catimor Jaluk/Ateng Jaluk/Ateng Super, East Timor, Gayo 2 (descendants of East Timor), S288, BP542A, P88, S795, and C50. The usual processing is semi-washed or full washed wet hulling so that the dominant taste is a strong body with the characteristic harsh and slightly earthy. Varieties of East Timorese descent have been released under the names Gayo 1 and Gayo 2. BP542A varieties in the Gayo highlands have good fertilisation potential, should be treated with appropriate techniques so that the characteristics of his harsh can be reduced.
